Most nights, Nick & I eat dinner together, with him acting as a willing guinea pig to all of my paleo experiments. But occasionally he has work dinners, and I’m left to my own devices. Often I try to talk a coworker or friend into getting a glass of wine after work. Or I’ll splurge and order…



2 large tomatoes

1 small ball of mozzarella

Basil leaves

Olive oil

Salt to taste

Slice tomatoes and spread them out on a large platter. Place a thin slice of cheese and a basil leaf on each slice of tomato. Drizzle olive oil over top, sprinkle with salt, and serve.
